Card: Write a card to your parents (Have we done this already?). If your parents are no longer alive then write a note to someone who has filled that position for you.

Celebration: Its the day after, whats a good way to celebrate Thanksgiving the day after Thanksgiving? Invite an elderly couple or a single friend over for leftovers.
